Ingredients
  

  • 4 medium-sized eggplants
  • 3 eggs
  • Salt and Pepper
  • Garlic
  • Onion
  • Cooking oil

Instructions
 

  • Grill the eggplant until cooked or when the skin turns black.
  • Peel off the skin and remove burnt skin and set aside.
  • Crack the eggs and place in a bowl. Adjust the number of eggs to the size of the eggplant
  • Season with salt and pepper. You can also use garlic and/or onion
  • Mix well.
  • Flatten the peeled eggplant using a fork and dip it in the beaten egg mix.
  • Put some oil in a Frying pan with medium heat.
  • Fry the eggplant one by one when already hot.
  • While frying, scoop some hot oil and pour over the uncooked side to cook it faster.
  • Once cooked, remove from the pan and then put in a serving plate with table napkins to absorb oil.
  • Served with Kamatis, Sawsawan or Ketchup.

Notes

You can also add some Pork Giniling to the Recipe.

Tortang Talong Recipe Preparation and Tips

The Tortang Talong Recipe has very simple ingredients and is quite easy to prepare. It only has Eggplant of course and Eggs.

The Eggplant can be prepared in 2 ways and it’s up to you to choose which one is your preference.

It can be boiled or grilled but many prefer grilling the eggplant because of the distinct taste it gives.

You have to choose medium-sized eggplant and fresh large eggs for the best tasting Tortang Talong ever.

Avoid overcooking the eggplant so it will stay juicy and after grilling or boiling, take off the skin before mixing the beaten egg.

Don’t put a lot of salt because it will not be satisfying to the palate if it becomes too salty.

Don’t over fry so the color of the egg will stay. This recipe doesn’t cost much because you will only need two ingredients though it may take a little patience in preparing it.

Preparation time is just about fifteen minutes while cooking time may take up to ten minutes only; depending of course on how many eggplants you will be cooking.

When the serving time comes, it will be best partnered with hot steamed rice or even fried rice.

It’s often served with catsup or vinegar with garlic which all the more makes it very appetizing.

You and your family will surely enjoy this sumptuous meal and will leave your tummy bulging with fullness and satisfaction.
